Kitchen Duct Cleaning
State Penitentiary's Dietary department has an exhaust system which is connected to several hoods allowing odor and grease to be vented through the roof with exhaust fans. The entire exhaust system shall be inspected for grease buildup by properly trained, qualified, and certified person(s) semiannually. Upon inspection any contaminated portions of the exhaust system with deposits from grease laden vapors shall be properly cleaned.
