The Statement of Work (SOW) defines the effort required for the purchase and delivery of the requirement to the SOUTHERN ARIZONA VAHEALTHCARE SYSTEM.

It is anticipated that a Request for Quotes will be issued in August 2018. Award of a firm fixed price contract is contemplated by August 10, 2018. Functional/Performance/Specification

Procurement and installation of a large combi-oven and citryne water filtration system for Nutrition and Food Services, with removal of current Combi-Oven.

NFS is requesting the replacement of a gas, Rational Combi- Oven and procurement of a Citryne water filtration system. NFS is responsible for the feeding of patients three meals a day, creating a substantial use for a large combi-oven that can produce a high volume of foods on a regular basis and support high volume production, with ease. Combi-Ovens are easy to use and can be pre-programmed to ensure consistency and ensure meals are completed on time. There is decreased cooking time associated with Combi-Ovens, which results in decreased product waste from over production.

The current large Rational Combi-Oven was purchased in 2009 and has been experiencing regular breakage due to normal use and increased calcification from water.

NFS is seeking a large gas, Combi-Oven with a Citryne water filtration system to improve the life span of the equipment.

Task 1- Procurement
Purchase large combi-oven with Citryne water filtration system for placement in Nutrition and Food Services.
NFS is seeking a large, combi oven with the following specifications:
Design Features:
208V, 20x18x26 inch/ 40x 12x 20 inch
Must be able to accommodate 20 full size sheet pans (18 x 26 ) or 40 steam table pans (12 x20 x2.5 )
Must have mobile, removable oven racks
Individual programming capabilities
Combi-steamer for selective use of steam and hot air, separately, sequentially, or combined
Core temperature probe with 6 measuring points with automatic error correction
Ability to handle mixed loads with individual supervision of each rack, depending on type, load amount, and the number of door openings to ensure cooking
Able to accommodate mixed loads with individual supervision of each rack
Must have mobile oven rack; integrated transport cart with ability to hold 20 pans
