Vendor(s) shall provide Head Start facilities with quality USDA and FDA food
products that have been inspected, tested and certified. The vendor(s) shall have quality control procedures in place that provide an unconditional guarantee of wholesomeness for every product sold. CEDA requires and may request proof of the following inspections:
• USDA continuous inspections
• Pathogen testing on raw material
• Lab testing of raw material for Coli form and genetic E-coli. Limits shall be dictated by USDA.
• Hazard Analysis Critical Control Point (HACCP) tracking and monitoring food safety program.
After delivery to CEDA, semi-perishable items shall have a minimum of 10
